An ox-tongue — the group is named for its leaves, which are covered in stiff hooked bristles that catch on skin like a cat's tongue. Jacquin's plates were engraved and coloured to a standard that only a court could pay for, and the result is that entirely ordinary Mediterranean plants sit in these volumes looking like state portraits. Which, in a sense, they were: this was an inventory of what the Habsburgs owned. Every plate in this book is a receipt.

Before a size goes on sale, the file is measured against it: pixels per inch at that size, how much of the picture a crop would lose, tone and sharpness. A size that fails is not offered, so there is nothing to choose wrong.
